Swiss fish – an emerging niche

We Swiss are eating more and more fish, but the market share of domestically produced fish and crustaceans stands at just 2.4%. That’s not surprising since we lack access to the sea. But Switzerland, too, not only has hobby anglers, but also professional fisherman on a number of its lakes who catch a variety of different fish species such as European perch, whitefish, zander and pike. They often sell their catch to restaurants that prepare fish specialties or directly to the public. In addition, in recent years farmers have begun to raise fish. They, for instance, have converted old barns for this purpose. Some producers have established themselves as breeders of perch, zander or carp. Fish farming is a very challenging undertaking.

Crustacean farming has come under fire internationally due to the extensive use of antibiotics and marine pollution. Today there are pioneer shrimp farms in Switzerland that are concentrating on sustainable regional production.

This isn’t only one kind of whitefish: more than 25 whitefish species live in Switzerland. Around 60% of the fish caught by professional and recreational fishermen in Switzerland are whitefish. This food fish is especially popular with professional fishermen. Many sell it directly.

Perch

The perch is a predatory fish that is widespread throughout Europe. It is also frequently found in Swiss lakes. Perch are easy to recognise thanks to their six to eight black longitudinal stripes and their large dorsal fin with pointed spines. The fish grow up to a length of 40 centimetres. Perch fillets are often a speciality in Swiss restaurants.

Pike

With a size of up to 150 centimetres, the pike is the largest fish found in Swiss lakes after the catfish. Its long head means that it is easy to identify. The pike likes to hunt for small fish close to the shore. Frogs and small birds are also on the menu for this predatory fish.

Zander

Like perch, zander are also part of the Percidae family. They usually grow to a length of between 40 and 60 centimetres and are thus the largest perch-like fish in Europe. The popular food fish and is considered difficult to catch due to its extremely cautious and shy nature.

Trout

The trout is the Swiss fish of the year in 2020. Switzerland’s lakes and rivers are home to five main species that have many local forms. As habitats suitable for the trout are increasingly lacking and it is being negatively affected by climate change, catch rates have decreased significantly in recent years.
